    Ingredients

    1×
    • •½ lb Pasta
    • •1 Shallot
    • •½ Red onion
    • •3-4 cloves Garlic
    • •1 teaspoon Chili flakes
    • • Salt
    • • Pepper
    • •2 tablespoons Tomato paste
    • • Vodka
    • •10 oz Heavy cream
    • •⅓ cup Parmesan cheese
    • •½ cup Pasta water
    • •4 Thin chicken cutlets
    • •2 Eggs
    • •1 cup Kinder's Italian Panko breadcrumbs
    • •¼ cup Parmesan cheese (for chicken)
    • •2 tablespoons Flour
    • •½ cup Oil
    • • Extra Parmesan
    • • Extra chili flakes

    Instructions

    1. 1

Season the chicken cutlets with salt and pepper.

    2. 2

Dip each seasoned chicken cutlet into the whisked eggs, then coat thoroughly with a mixture of breadcrumbs, Parmesan cheese, and flour. Place the coated chicken in the fridge to rest while you begin preparing the sauce.

    3. 3

Cook the pasta in salted boiling water until it reaches an al dente texture. Before draining, reserve ½ cup of the pasta water, then drain the remaining water.

    4. 4

In a large pan, sauté the finely chopped shallot (or red onion) and minced garlic for 2 to 3 minutes.

    5. 5

Add the chili flakes and tomato paste to the pan and continue to cook for another 2 minutes.

    6. 6

Pour in a splash of vodka and cook for 1 to 2 minutes to allow the alcohol to evaporate.

    7. 7

Stir in the heavy cream, then season the sauce with salt and pepper. Allow the sauce to simmer gently for a few minutes, stirring occasionally, while you prepare the chicken.

    8. 8

Heat the oil in a separate pan over medium-high heat. Fry the chicken cutlets for 3 to 4 minutes per side, until they are golden brown and cooked through. Remove and set aside.

    9. 9

Gradually add the Parmesan cheese to the simmering sauce until it thickens. Then, slowly incorporate the reserved pasta water, a little at a time, until the sauce achieves a creamy and smooth consistency.

    10. 10

Add the cooked pasta to the sauce and mix well to combine.

    11. 11

Slice the crispy chicken cutlets. Serve the pasta, topped with the sliced chicken, and garnish with extra Parmesan cheese and chili flakes. Enjoy!
