Ingredients
- •3-4 Chicken thighs
- •3-4 Chicken drumsticks
- •2 teaspoons Browning seasoning
- •2 teaspoons Garlic powder
- •2 teaspoons Onion powder
- •2 teaspoons Salt
- •1 teaspoon Paprika
- •1 teaspoon Dried thyme
- •½ teaspoon Black pepper
- •¼ teaspoon Allspice
- •1 Yellow or red onion
- •3 Spring onions
- •1 Green bell pepper
- •1 Red bell pepper
- •1 Scotch bonnet pepper
- •4 Garlic cloves
- •¼ cup Oil
- •2 Tablespoons Ketchup or BBQ
- •1-1 ½ cup Chicken broth
- •½ cup Coconut milk
Instructions
- 1
Combine the chicken thighs and drumsticks with browning seasoning, garlic powder, onion powder, salt, paprika, dried thyme, black pepper, and allspice in a bowl. Add the chopped yellow or red onion, spring onions, green bell pepper, red bell pepper, and garlic cloves. Mix everything together, ensuring the seasoning is well rubbed into the chicken pieces.
- 2
Cover the bowl and allow the chicken to marinate in the refrigerator for at least 1 hour, or preferably overnight, to maximize flavor absorption.
- 3
Before cooking, remove the bell peppers, onions, garlic, and dried thyme from the chicken and set them aside.
- 4
Heat the oil in a large skillet over medium heat. Once hot, carefully add the marinated chicken pieces and brown them for approximately 1-2 minutes per side until lightly golden.
- 5
Remove the browned chicken from the skillet. Then, add the reserved onions and bell peppers to the same skillet and sauté them until they have softened, which should take about 5 minutes.
- 6
Return the chicken to the skillet. Pour in the chicken broth and coconut milk, then add the scotch bonnet pepper and the ketchup or BBQ sauce.
- 7
Bring the mixture to a simmer, then cover the skillet and let it simmer for 30-40 minutes, stirring occasionally to prevent sticking and ensure even cooking.
- 8
After the simmering time, remove the cover and continue to simmer for an additional 10 minutes. This step allows the gravy to reduce and thicken, intensifying the flavors.
- 9
Serve the brown stew chicken hot over some rice and peas and enjoy!
