    Ingredients

    • •2 each Halibut fillets
    • •1 cup Cherry tomatoes
    • •1 medium Zucchini
    • •½ medium Red onion
    • •1 medium Bell pepper
    • •4 ounces Feta cheese
    • •2 tablespoons Greek yogurt
    • •2 tablespoons Fresh dill
    • •1 each Lemon
    • •4 tablespoons Olive oil
    • •2 cloves Garlic
    • •1 teaspoon Dried oregano
    • •½ teaspoon Salt
    • •¼ teaspoon Black pepper

    Instructions

      Preheat your oven to 400°F (200°C). Prepare a Baking Sheet.

      Wash and chop the Zucchini into half-moon slices. Core and chop the Bell pepper into 1-inch pieces. Halve the Cherry tomatoes. Peel and thinly slice the Red onion. Mince the Garlic.

      In a large Bowl, combine the chopped Zucchini, Bell pepper, Cherry tomatoes, Red onion, and minced Garlic. Drizzle with 2 tablespoons of Olive oil, 0.5 teaspoon of Dried oregano, 0.25 teaspoon of Salt, and 0.125 teaspoon of Black pepper. Toss to coat evenly.

      Spread the seasoned vegetables in a single layer on the Baking Sheet. Roast for 20 minutes, or until tender and slightly caramelized.

      While the vegetables roast, prepare the whipped feta. In a Blender, combine the Feta cheese (crumbled if necessary), Greek yogurt, juice from half of the Lemon, and 1 tablespoon of fresh Dill (chopped). Blend until smooth and creamy. If too thick, add a tiny splash of water or more lemon juice.

      Pat the Halibut fillets dry with paper towels. Season both sides with the remaining 0.25 teaspoon of Salt and 0.125 teaspoon of Black pepper, and 0.5 teaspoon of Dried oregano.

      Heat a Cast iron skillet over medium-high heat. Add the remaining 2 tablespoons of Olive oil. Once shimmering, carefully place the Halibut fillets in the skillet.

      Sear the halibut for 3-4 minutes per side, until golden brown and cooked through. The internal temperature should reach 145°F (63°C).

      To serve, spread a generous spoonful of whipped feta on each plate. Top with the roasted vegetables and place a seared halibut fillet alongside. Garnish with freshly chopped Fresh dill and a wedge of the remaining Lemon.
