Hot Honey Beef and Sweet Potatoes
This recipe features tender sweet potatoes topped with seasoned ground beef, a dollop of cottage cheese, and a sweet and spicy hot honey drizzle, offering a balanced and flavorful meal.

- •2 Sweet potatoes
- •1 lb Lean ground beef
- •1 packet Siete taco seasoning
- •⅓ cup Water
- •2 tbsp Olive oil
- •½ cup Cottage cheese
- •¼ cup Honey
- •½ tsp Ancho chile powder

Preheat the oven to 230°C (450°F). Line a baking sheet with parchment paper.

Slice the sweet potatoes in half lengthwise. Drizzle them with olive oil, then season with ancho chile powder, salt, and black pepper. Rub the oil and seasonings into the potatoes.

Place the seasoned sweet potatoes cut-side down on the prepared baking sheet. Bake for 40–50 minutes, checking them at around 30 minutes. They are ready when tender and easily pierced with a fork.

When the sweet potatoes are almost done, heat the remaining olive oil in a skillet over medium-high heat. Add the ground beef and cook until browned and fully cooked.

Drain any excess fat from the beef. Mix the taco seasoning with ⅓ cup water, then add it to the pan. Reduce the heat to low and cook, stirring occasionally, until the beef is well coated and the sauce has thickened.

While the beef is cooking, prepare the hot honey. Add honey and ¼ teaspoon ancho chile powder or chili flakes to a small saucepan. Warm over low heat, stirring until the honey becomes thin and pourable. Turn off the heat and let it rest.

Remove the sweet potatoes from the oven and gently mash the flesh with a fork.

Divide the beef between the sweet potato halves. Top with cottage cheese and drizzle with the hot honey.
