Honey Gochujang Crispy Chicken
This recipe delivers crispy, flavorful Korean fried chicken featuring a tender, marinated interior and a sweet, savory, and slightly spicy gochujang-based sauce.
Ingredients
- •½ cup Soy sauce
- •4 tablespoons Rice vinegar
- •2 cloves Garlic
- •2 teaspoons Ginger
- •4 Boneless, skinless chicken thighs
- •1 cup Cornstarch (2 tsp for slurry to thicken sauce)
- •2 teaspoons Garlic powder
- •1 teaspoon Salt
- •1 teaspoon Black pepper
- •1 ½ cups Oil
- •¼ cup Gochujang paste
- •¼ cup Brown sugar
- •2 tablespoons Honey
- •2 teaspoons Sesame oil
- •3 tablespoons Water
Instructions
- 1
Cut the chicken into 1–2 inch pieces and place them in a bowl.
- 2
Add the soy sauce, rice vinegar, grated garlic, and grated ginger to the chicken. Toss to coat the chicken thoroughly and allow it to marinate while you prepare the sauce.
- 3
Combine all sauce ingredients, excluding the cornstarch and water, in a measuring cup and mix them well.
- 4
Pour the mixed sauce into a saucepan and cook over medium-high heat for approximately 5 minutes, stirring occasionally.
- 5
Whisk the cornstarch and water together to form a slurry. Reduce the heat and stir this slurry into the sauce. Continue cooking until the sauce thickens.
- 6
Remove the thickened sauce from the heat and set it aside.
- 7
Heat the oil in a frying pan until it reaches 325°F (165°C). Use a thermometer to ensure accuracy.
- 8
While the oil is heating, combine the cornstarch, garlic powder, salt, and pepper in a bowl.
- 9
Remove each piece of chicken from its marinade and coat it completely in the cornstarch mixture, pressing the coating onto the chicken to ensure it adheres well.
- 10
Fry the coated chicken in batches, being careful not to overcrowd the pan.
- 11
Continue frying each batch for approximately 5–6 minutes, or until the chicken is golden brown and cooked through.
- 12
Transfer the fried chicken pieces to a sheet pan lined with paper towels or place them on a cooling rack to drain any excess oil.
- 13
Once all the chicken has been fried, perform a second fry for each batch, cooking them for about 2 minutes to achieve extra crispiness.
- 14
Toss the extra crispy chicken with the prepared sauce, or serve the sauce on the side for dipping.
- 15
Serve and enjoy the Korean Fried Chicken.
