    • ½ cup Soy sauce
    • 4 tablespoons Rice vinegar
    • 2 cloves Garlic
    • 2 teaspoons Ginger
    • 4 Boneless, skinless chicken thighs
    • 1 cup Cornstarch (2 tsp for slurry to thicken sauce)
    • 2 teaspoons Garlic powder
    • 1 teaspoon Salt
    • 1 teaspoon Black pepper
    • 1 ½ cups Oil
    • ¼ cup Gochujang paste
    • ¼ cup Brown sugar
    • 2 tablespoons Honey
    • 2 teaspoons Sesame oil
    • 3 tablespoons Water

    Instructions

      Cut the chicken into 1–2 inch pieces and place them in a bowl.

      Add the soy sauce, rice vinegar, grated garlic, and grated ginger to the chicken. Toss to coat the chicken thoroughly and allow it to marinate while you prepare the sauce.

      Combine all sauce ingredients, excluding the cornstarch and water, in a measuring cup and mix them well.

      Pour the mixed sauce into a saucepan and cook over medium-high heat for approximately 5 minutes, stirring occasionally.

      Whisk the cornstarch and water together to form a slurry. Reduce the heat and stir this slurry into the sauce. Continue cooking until the sauce thickens.

      Remove the thickened sauce from the heat and set it aside.

      Heat the oil in a frying pan until it reaches 325°F (165°C). Use a thermometer to ensure accuracy.

      While the oil is heating, combine the cornstarch, garlic powder, salt, and pepper in a bowl.

      Remove each piece of chicken from its marinade and coat it completely in the cornstarch mixture, pressing the coating onto the chicken to ensure it adheres well.

      Fry the coated chicken in batches, being careful not to overcrowd the pan.

      Continue frying each batch for approximately 5–6 minutes, or until the chicken is golden brown and cooked through.
