    • •1 Onion
    • •3 cloves Garlic
    • •2 tablespoons Fresh ginger
    • •2-3 Eggs
    • •4 tablespoons Butter
    • • Salt
    • • Pepper
    • •1 teaspoon Sesame oil
    • •1 tablespoon Chili crunch oil
    • •¼ cup Soy sauce
    • •1 tablespoon Sriracha
    • • Sesame seeds
    • • Green onions

    Instructions

      In a mixing bowl, combine the soy sauce, dark brown sugar, juice from one orange, 1 teaspoon sesame oil, and 2 tablespoons chili crunch oil to create the marinade. Add the cubed chicken breasts and toss thoroughly until each piece is well coated. Allow the chicken to marinate for a minimum of 15 to 30 minutes.

      Heat a large pan or wok over high heat. Add a small amount of cooking oil to the pan. Cook the marinated chicken in batches, ensuring not to overcrowd the pan, until it is browned and fully cooked. Remove the chicken from the pan and set it aside.

      Using the same pan, add the chili oil or cooking oil. Incorporate the diced carrots and onion, cooking until they begin to soften.

      Stir in the minced garlic and minced fresh ginger. Continue to cook for approximately 1 minute until the aromatics become fragrant.

      Move the cooked vegetables to one side of the pan. Crack the eggs into the empty space and scramble them until mostly cooked. Afterward, mix the scrambled eggs into the vegetables.

      Add the butter and the day-old cooked rice to the pan. Toss all the ingredients together, continuing to cook until the rice is thoroughly heated and starts to develop a slightly crispy texture.

      Stir in the 1/4 cup soy sauce, 1 teaspoon sesame oil, 1 tablespoon chili crunch oil, and 1 tablespoon sriracha. Season with salt and pepper according to your preference. Mix well to ensure the rice is evenly coated with the seasonings.

      Return the cooked chicken to the pan and toss all ingredients together. Continue cooking for an additional 1 to 2 minutes to allow the flavors to meld.
