Ingredients
- •2 lb Beef
- •½ Red onion
- •2 Red bell peppers
- •2 Large yellow potatoes
- •2 tablespoons Rice flour or cornstarch
- •1 cup Frying oil
- • Salt
- • Black pepper
- • Onion powder
- • Garlic powder
- • Paprika
- • Chili powder
- •2 teaspoons Worcestershire sauce
- •1 cup Shredded cheddar cheese
- • Chives
Instructions
- 1
Prepare the vegetables by dicing the red onion and red bell peppers, then cube the large yellow potatoes.
- 2
Place the cubed potatoes in a large bowl and cover them with ice water, letting them soak for at least 30 minutes.
- 3
Drain the potatoes thoroughly and pat them completely dry.
- 4
In a bowl, toss the dried potatoes with the rice flour or cornstarch until each piece is evenly coated.
- 5
Preheat your oven to 350°F (175°C).
- 6
In a large skillet over medium-high heat, cook the beef, diced onion, and diced bell peppers. Season the mixture with salt, black pepper, onion powder, garlic powder, paprika, and chili powder. Stir in the Worcestershire sauce and continue cooking until the beef is fully browned and the vegetables have softened.
- 7
Heat the frying oil in a separate pan until it reaches 375°F (190°C). Fry the coated potatoes in small batches until they are golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.
- 8
Combine the crispy fried potatoes with the beef and vegetable mixture in the large skillet.
- 9
Transfer the entire mixture to a deep baking dish and sprinkle the shredded cheddar cheese evenly over the top.
- 10
Bake in the preheated oven for approximately 20 minutes, or until the cheese has completely melted and is bubbly.
- 11
Garnish with freshly chopped chives and serve immediately while hot.
