    This recipe yields tender, flavorful shredded beef, slow-cooked in a rich adobo-style sauce with chipotle chiles, garlic, and lime. It's perfect for a variety of Mexican-inspired dishes.

    Ingredients

    • 3 ½ lbs Chuck roast
    • 6-8 Garlic cloves
    • Salt
    • Black pepper
    • Garlic powder
    • Adobo seasoning
    • 1 cup Beef stock
    • 3 Bay leaves
    • 1 bunch Cilantro
    • 1 Large yellow onion
    • 2 Large tomatoes
    • 3-4 Chipotle chiles in adobo
    • 1 tablespoon Adobo sauce from the can
    • 1 Bell pepper
    • 1 tablespoon Cumin
    • 2 teaspoons Oregano
    • 3 Limes
    • 1 tablespoon Soy sauce
    • 8 oz Tomato sauce

    Instructions

      Cut the chuck roast into 2–3 inch chunks.

      Place the prepared beef into a large bowl. Add the soy sauce, chipotle/adobo sauce, salt, pepper, garlic powder, adobo seasoning, cumin, and the juice from two of the limes. Mix thoroughly to coat all the beef.

      While the beef is marinating, heat a large pan over medium-high heat. Add half of the large yellow onion, the bell pepper, the large tomatoes (if using fresh), and the garlic cloves. Cook these vegetables until they soften and start to brown.

      Transfer the cooked vegetables to a blender. Add the cilantro, tomato sauce (if you are using canned sauce instead of fresh tomatoes), and the chipotle chiles in adobo. Blend the mixture until it is smooth.

      Heat a large pot or Dutch oven over medium-high heat. Brown the marinated beef in batches if necessary, ensuring not to overcrowd the pot. After browning, add the remaining half of the large yellow onion to the pot.

      Pour in the beef stock and the blended sauce. Stir everything together, making sure to scrape up any browned bits from the bottom of the pot.

      Taste the mixture and adjust the seasoning with additional cumin, salt, pepper, and adobo seasoning as needed. Stir in the oregano and bay leaves.

      Bring the contents of the pot to a boil. Once boiling, reduce the heat to low, cover the pot with a lid, and let it simmer for 2–3 hours, or until the beef is extremely tender and can be easily pulled apart with a fork.

      Remove the pot from the heat. Discard the bay leaves. Squeeze the juice from the remaining lime over the barbacoa.

      Using two forks, shred the beef. Serve the barbacoa with your favorite side dishes or toppings.
